I'm watching the whole show from the start after the sequel was announced since I never saw it subbed and am at episode 100 now

I am of the belief that the story was actually pretty decently paced up to around the point Inuyasha gets the Backlash Wave for the first time. Things kind of progressed very naturally from character to character and scene to scene. Helping out "village of the day" was kind of rare without it tying into something or leading to something later. After that, things really start stalling and this is where the whole Inuyasha "formula" comes into play. It gets to the point where no wonder so many people like Sesshomaru more because he episodes were kind of different.

I also want to point out that the sequel takes place 20 years after the last chapter of the manga, so that makes Rin 31. If you substract the age of the twins, it makes her 17 when she became a mother, so probably Sesshomaru didn't went full Muhammad on her.

I seriously hope Shippo has a relevant role in the new anime.

First of all, Takahashi has nothing to do with this show. It's a continuation but she's not involved

Second of all, the plot summaries don't give the best confidence considering how it seems that none of these kids have been with their parents

The reason why Sesshomaru episodes were well liked is because they had a change of scenery, plus a change from the two characteristics of the Inuyasha group: repetitive village scenery and repetitive comedic reliefs of Inuyasha being an asshole/Shippo being stupid/Miroku being a pervert.
Sesshomaru episodes usually stayed away from villages, and tended to go to more remote/unusual locations and characters, and the comedic relief came from a dynamic that we didn't see every single episode, namely Jaken being arrogant and a boot licker, Rin being sassy with him, and Sesshomaru losing his patience with Jaken. The reason why so many fans used to call for a Sesshomaru gang spinoff was not because his team had an interesting dynamic by itself, but rather their dynamic was interesting because it was a welcome break from that of Inuyasha's group.

I think this is the main issue we all have with the sequel. It is really disheartening to find out that the characters we liked so much and were happy to have a happy end after Naraku had actually only had a short lived happiness with their children and their families were broken apart. Even if the parents return at this point, their families will not have the unity as before, especially with the twins, who each have an adoptive family now.
It feels like even if everything is sorted out in the end of the sequel, the end will still be bittersweet in the knowledge that these girls had to grow up without the love, care and protection of their parents.
