If you're incapable of appreciating anything but a latecomer with little in common with the majority of the genre you did not "get into" the genre. The act of getting into anything means that you in general like or appreciate it enough that you are exploring it and finding other things in it that you like. The term doesn't apply to you subjecting yourself to tons of things that you hate.

Pretty much all of these I would say were relatively positive to extremely positive viewing experiences. I have favourites obviously, hell I love Evangelion more than most Mecha, but to say only one example of a vast genre that can be so many different things is better than anything else in said genre you come off as incredibly reductive.

Yeah, actually. That's part of the reason why I like a lot of it. It's comfortable junk food. TTGL is pretty different from most mecha in that it changes its setting, scenario, tone, and genre pretty often, all in the name of escalation.

You're not going to get that from most mecha shows.

It's funny seeing people so ruined by 26 episode max series that anything longer is labeled as being mostly filler. The longer lengths allow for more exploration of the setting and character relationships but people shit on anything that doesn't have explicit plot development every episode.

See above. The pace is slower because there are more episodes but that doesn't mean things don't change. There are some where that's true (for instance what I've watched so far of Mazinger) but most of the more popular series may be episodic but still have plots and parts where things change. Even then a show being purely episodic is not a bad thing and you should be able to enjoy episodic shows too or else you're just stuck in a limited view of anime as a whole.

This is very untrue unless you specifically go out of your way to watch purely episodic series. This isn't true of Gundam (or most of Tomino's series), VOTOMS, Eva (though as someone who doesn't like mecha you may like it), Macross, Eureka 7, etc. Yes, most mecha are in essence episodic in the sense of mech battles every episode but they still do have plots that develop and things that change over the course of the story.

To its determent. A show like Captain Earth would have actually benefited from 25 more episodes.

Personally, I dropped Captain Earth after like five episodes, so I don't think extra time would have helped it for me.

Well, that's because Captain Earth has some inherent problems with its writing. But for those of who like to torture ourselves and commit to every show we watch, it would've made a difference.
