I've argued this exact topic so many times it just gets tiring at times.

Only thing katakuri had over him was his observation which was over come with snakeman, which Luffy intentionally left for the last leg of the fight so as not to repeat the same mistake he made with Doflamingo and have his G4 run out.
The answer in the end is simply that katakuri had lower endurance. Luffy takes more damage in a single fight, even against opponents weaker than him, than katakuri has likely taken in his entire life. This is not a game where two characters have health bars and hit points. There are characters like blackbeard and Luffy who always take a lot of damage in fights but they always get back up, endurance fighters and brawlers, then there are characters like katakuri who pride themselves on not taking any damage and can dish out a lot more then they can take. If you count the number of hits both took it's actually pretty close as well and even if it wasn't, watch real life fights like UFC or something and you'd see plenty of cases where someone that's been getting beat on for most of the fight wins with a few punches. It would only be bad writing if luffy's endurance and katakuri's lack thereof wasn't displayed beforehand. Throughout the fight, you see katakuri getting frustrated and tired and unable to land a clear fatal hit, only time he did land one was due to interference.
There's also the themes and psychology of the fight that play an important role in his 'defeat' and why he chose to fall on his back in the end but that's a whole other essay.
He realized that no matter how much he beats him, Luffy will always get back up, so he just gave up since he started liking the guy (no homo) and doesn't particularly like his mama

Compare it with Lucci where Luffy does struggles greatly and beats him with one desperate incredibly powerful move when both of them can barely even stand. Mass and size is irrelevant, Luffy can easily beat giants. Katakuri's primary ability is his observation, which has allowed him to dodge all attacks, he's not used to taking hits at all, meanwhile Luffy is a grounded brawler.

Just because he has higher endurance than the likes of katakuri doesn't mean he doesn't take any damage or can't lose. You would have a point if there weren't enemies like blackbeard as well who also have high endurance and will like Luffy.

He's bigger so he uses more energy, but Luffy is smaller so he uses less energy. This is why Luffy won. Not to mention that his size doesn't really matter since he's weaker than Luffy.

You have a panel in the Luffy vs Doflamingo fight dedicated to doflamingo realizing that his haki embedded kick can't counter G4. You're supposed to reailze (as doflamingo did) that Luffy breaks haki battle mechanics thanks to his devilfruit. Haki lets you damage devilfruit users but does NOT nullify the devilfruit. In gear 4 Luffy puts an air cushon arround every muscle on his body. In base form Doflamingo can damage luffy with haki. In gear 4 luffy still has his air cushon even if you use haki.
People still don't get that Luffy takes way less damage than normal in G4. You can see that in Katakuri fight when Luffy takes knee spikes to the face. And you can clearly see its Odas intention by looking at pick realated.
