Ironically, in that very interview mentioned in , Nasu confirms that he sold out precisely because people appreciated mainstream-pandering stuff like Fate and UBW more than the darker HF back then.

UBW basically screams at us that Shirou’s ideals are fucking so essential to his character and life that he rather spend the rest of his life fighting rather than forsake them.
Then HF comes along and is like “actually Shirou is one walk home with Sakura from literally abandoning his ideals.”

1. He spends the entire war struggling to maintain those values after having spent time off the battlefield while preparing for the war.
2. The scenario was meant to represent his actual life experiences, constantly making the choice that saves the most people only for things to continue spiraling out of control with the ones who remained. That's the entire reason he sought the grail.
3. He upheld his beliefs in the end.
