That "god" doesn't claim to be a god, and doesn't give a shit what people think it is. It's just something that is enforcing some sort of "fairness" on the world. In a way it seems more like the collective will of the world than a singular being.

Truth isn't really a separate entity. Ed clearly believes in alchemy (magic), and in the forces behind the alchemy, built he rejects the notion of a supreme being dictating the world.

This. Truth is basically the embodiment of the universe and the natural laws that control it. When Ed says he's an atheist he means that he doesn't believe in God as defined by any religion, or that he doesn't believe in an omnipotent being that has a will of it's own and can decide to help people on a whim or because they prayed hard enough.

But then there's the Winry fanservice ED, so maybe he's into that.

the Ainu connection is pretty non-obvious if you're not Japanese or decently knowledgeable about Japanese history. If you don't know anything about the Ainu it seems like the Ishvalans are literally just Iraqis because of both the way the series handles the Ishval War and the fact that it first got popular at the same time as the second Gulf War
