The reason why Rem killing Subaru is a non issue is because it's Subaru's god damn fault each time. Subaru realizes this in the show, that Rem and Ram were never out to kill him from the get go and it was his actions that caused her to act that way. The first loop he gained their trust. His shifty actions and the smell of the Witch over him cause suspicion in the second and third resulting in his deaths. The fourth loop he realizes all this and decides that to achieve the happy end or whatever he has to gain their trust, not only to save his own life but to save theirs. The fifth is where he acts differently gaining their trust and then doesn't get killed, by accidentally tripping all of Rem's capture flags

Subaru goes to hell and back to simp for Emilia. She's his waifu and he'll keep going after her. But he can't just keep being himself and get handed Emilia on a silver platter. He needs to continue improving himself to become a man who deserves her. And even if she says no in the end, he's still a better version of himself.
Rem is the easy way. She does hand herself out on a silver platter, which is what makes her so appealing to the lazy degenerate NEET weeb who's the target audience. And because it's an isekai and you're conditioned to self-insert as the MC, having the MC do something that you'd never do creates cognitive dissonance.
