I think it's a little more complicated. The fact that Emilia looks exactly like the witch that gave Subaru functional immortality isn't random. Emilia had to literally become an extremely powerful witch, break time, or sever a part of herself so that Subaru would actually last 5 minutes with her. Rem dedicates battles and hand holding to Subaru, but Emilia is obviously giving A LOT more, we just don't know specifically what that is yet.

Emilia and Satella aren't the same person or even related. If there is a connection Emilia is maybe a part of a part of whatever is keeping Satella locked up. And I don't mean a vessel or anything, I mean she literally has a magic mental key to a big stone door in the woods.

It's funny but there's more of actual relevance in the first OVA than the second, which didn't cover anything we didn't already know, won't get actual detail in S2, or doesn't matter at all despite looking like it probably should've.

After about 2 years, he would enter university, graduate as a loner, become a working adult, and with stability of those reasonably essential qualities, he would honestly be living life as a full-fledged member of society, and then he would cling on to a kouhai with such a heart that-a Rem kind of heart-she would find his incompetence cute. They would have a normal marriage, and then he would live a suitably happy life until he died. There’s no way his dad would continue to be that irresponsible towards his son, you know?

And his feelings for Emilia aren't that super strong like it was before, after From Zero his feelings for her mellow out into something much more healthy and respectable instead of the blind white knight he was before. He isn't trying to get her to look his way anymore, it's something more describable as friendship instead of romance.
