An argument could probably be made about kimetsu no yaiba. Ufotable did a very good job.

Pic related. Fantastic voice acting and sound direction really elevated the source material.

Kimetsu no Yaiba and Fire Force are recent example imo.

I'm of the belief that anime should be all about animation and the spectacle of putting things in motion, taking into account how difficult, time consuming and expensive animating is, the better anime tend to be those with weird art styles that don't require much detail and stories that don't need much or action tend to faciliate good animation were quality doesn't dip.

So stuff like ONE's Mob Psycho, Fukumoto's works as well as Taiyou Matsumoto I think are good examples of these parameters. Obviously where there's passion and budget anything can happen.

But animation ain't everything, adapting the story is also important. That being said I think One Outs is well done, I don't remember it deviating much at all from the source and Kaitani's style is manageable and the story doesn't require excessive movement.

Mob Pyshco S1 is also pretty well done, though I don't really remember how much the story deviates, S2 on the other hand I remmber not liking how they adapted certain developments in the story.

Kimetsu no Yaiba skips a bunch of stuff if I remember correctly from the manga.

Probably not what you're interested in but I think Machiko-sensei is cuter in the anime, but there isn't much of the manga online so I don't know how well the art was by the end of it. I'd still like to read the whole thing.

Kareshi kanojo, aku no hana, kimetsu no yaiba, OPM S1, berserk '97, FMA:brotherhood, Akira, elfen lied, these right on my mind already, there's certainly much more.

I wouldn’t say better overall but they definitely did a good job at heightening a lot of the aspects of the source material.
