Ergo Proxy is the ultimate example of forced depth.
Not at all. the core thread throughout the story is based on trauma and mental conflict induced amnesia, loss of ability to connect, and ultimately a diminished ego. See eg the effects of parentification, narcissistic abuse, CPTSD, etc. All of this is woven into a theological narrative where eg the dual nature of the creator, the problem of evil, determinism, creators creating creators (basis of logic), etc. The domes are a physical representation of the Proxy's mind, as are all the people they dream up via the wombsys. Vincent is carrying the key to his memory around his neck the entire show, and ultimately it unlocks a room (of his mind).
The list goes on. It's about the cluster B disorders as well. It's also a spiritual successor to Brave New World in how Romdeau functioned. Through this, Ergo Proxy does well to encompasses the basis of all human suffering and despair (the same despair as the Gods), flaws in man's organizational structures. Human nature here is investigated via organizational and control structure (hence Raul's rage and realization "we are incomplete beings!"
You just didn't get it, that's all. Which is fine. Some people will see very little, for others every scene is packed to the brim with symbolism, allegory,and the sensation of something "bit by bit, bit by bit, bit by bit" wearing down the barriers in their mind. I think there's a childhood trauma component required to experience it on that level. It feels almost engineered to draw those parts of you out. It feels familiar, but also deeply unsettling. A brutal mirror for those who have lost the ability to see a "self" reflected in anything, and lost the ability to face the awareness that they exist. Likewise if you accept that others exist, there is an unfortunate side effect in that if there is other, there is also self.

You should also look up the notion of the "false self" in narcissism. That's what a "proxy" is, a shell personality put forward that one lives through so they never have to face the vulnerability of being directly visible (perhaps because they have arrested development, or have no such self). The false self is an inner God. Lot of similarities here as well. Most of the Proxies developed stable tendencies, and in Proxy 1's case, it was a need to have complete control. Just look at the notion of Romdeau.

I keep forgetting things, but in the scene where that screenshot was taken, before he smashes all the mirrors (and still cannot escape his fragmented reflection) he recalls Re-L and says "I'm... Re-L.... no...." In this one short line it shows he's accepted that his attachment to (and idea of) Re-L, does not constitute an identity. He is not created by his environment or those he is seen by, such a thing would lack identity.
Anyway, again. Trauma based dissociation and compartmentalization, diminished ego, and so forth. The whole idea is not being able to continue without wiping your memory and starting over.
I have no idea where people get all these notions of "forced depth". there are a few lines where I can agree ("if I have no memory, can I even prove I exist?"), but it fit well and had a purpose.
Another great line:
