Anime typically doesn't achieve that level of detail.

Not enough detail to warrant the cost of mastering in 4K. Only a few crazy detailed movies or OVAs would benefit from it. That’s why stuff like Akira is what get the 4K treatment.

720p looks cringe in my 4K TV.

It's not like they're actually animating in 4k though, as far as I know it's standard, maybe slightly larger frames, on top of a massive background with effects added in post. Looks awesome but it would only ever be a pseudo 4k.
Not that many people have the ability to even watch 4k, so for the amount of work out into it, that only enthusiasts with expensive TVs would appreciate, you're kidding yourself if you think true 4k animation would ever be normalized

Even this movie loses quality in 4k. Backgrounds and lines become blurry with visible aliasing, anime just isn't created with 4k in mind.

Why so little anime has 5 or more channels of audio

I imagine it has to do with not using sets and all sound is just some guy making noises with his mouth, inserting it in the right spot in the video and going "seems fine" .
