Utena is my pick. Rose of Versailles is a classic if you don't mind the dated animation.
I also recently watched Princess Jellyfish and enjoyed it.

The anime's ending is complete trash and while there are some additions that I like it's mostly a straightforward adaptation. I don't think it was ever trying to be a "deconstruction" or whatever term people want to use. It's a shoujo romance series that at times pokes fun at certain tropes. You don't have to be rebelling against tropes to poke fun at them.

It can't be helped, trash original endings are the fate of all ongoing manga adaptations. It's true that Ouran's not a deconstruction but it was that shoujo that makes fun of other shoujo. It gradually lost that aspect towards the ending for me.
