I watched SAO a few times involuntarily and it's probably the most boring anime ever. It's not even badly made or anything like that, it's just so mediocre and unoriginal that it hurts. I also watched the pilot episode of Re:Zero and while it seemed a tiny bit better I had no desire to keep watching it either.
Those generic clean normalfag fantasy worlds just aren't engaging. You cannot make a good anime solely based on that. If you gonna use a world like that, it needs something else to make it interesting, like it being funny as fuck.
