the whole point to yanderes, and most anime shit in general, is to be able to indulge in things that aren't realistic. in this case, the idea of a girl that likes you to an absurd extreme.

There is a point when suspension of belief generally becomes impossible. For most people typically "wanting to have a relationship with a literal violent psycho" falls somewhere in this zone of unbelivability. As such there is probably low demand for this trope, it would ruin any immersion in a series for most people, meaning only the most fan-service filled series, where any form of realism is effectively tossed out the window for self indulgence would bother to keep it in stock. Any series aiming for any higher artistic goals than simply masturbating its readers will probably avoid them.

I seriously think you might be in the wrong place. you should be reading literature. there's a reason the vibe of some of the 90s/early 00s shows like texh, GitS, lain, etc didn't stick. anime is basically masturbation of unrealistic fantasies like being overpowered in another world, being the superpowered hero, girls (male), vampire girls, monster girls, dominant girls, group of girls being sugary cute instead of whores, etc.
