Formulaic novels will almost always lack soul. They follow the tropes because the tropes will reliably interest a new set of young readers every year and generate revenue. Non-formulaic novels are real gambles because they historically struggle to attract an audience of critical mass and remain obscure and unknown a lot of the time.
It's like Redditfaggot comments - parrot some safe meme reply and get upvoted, write a longer thoughtful reply and never get seen. Whether it's novels/movies/music/vidya games, if you grow up and develop a critical eye you'll realize it's 98% rehashed hot garbage and you've got to wade deep to find real gems.
To piggyback off this, light novels suck not because the authors are young/inexperienced (though they often are) but mostly because their intended audience is young/inexperienced.

Many novels have crappy writing and themes. It's not limited solely to light novels, just like how there are some light novels that weave themes into their writing well and create strong characters.

it's literally not the writer's fault.
All of this is based on the supposition that you get the writing deal, so bear with me.
In the US, if you want to be published, you get an agent and submit a written manuscript. the agent shops your manuscript around, you get a contract, you get an editor (or one is provided to you) and you fix what needs fixing, and your shit gets published. If it's popular, you get a book deal - usually a book or two per year.
In japan, you write whatever, and you submit it. The company takes what you've written as a *proposal* and you write. You're given an "editor", but the "editor" is really a company dog that wants to make the company money.
The "editor" accepts or rejects each part that's to be published. This is why new characters are suddenly introduced. Why there are flashback arcs. Why stories never go forward. Why MC never fucks the Best Girl. The company is milking you for your popularity.
If you get the sales numbers you're given more freedom in what you want to write in your story, but japanese printing is all about milking everything to the last possible drop before going ahead with an ending.
Strong beginning -> chewy middle -> piss ending.
When you see this formula, you know the writer isn't writing what he wants, but what the company wants him to write so that they can make money, chapter by chapter.

Is this why I love starting new novels to read but always have trouble finishing them? It happens with other mediums but to a much higher degree when I read light novels.

Not that user, but maybe because it nicely illustrates the phenomena? To further add to this, no, it's most certainly not the age of authors. A quick glance at the history of mankind will reveal how stupid such an assumption is. Young, very young lads, have accomplished marvelous things time and again.
Same thing happens here. Even threads with more substance die with barely any replies more often than not.
Novelty and shock value gets your LN more attention then quality writing.
