No. Pride for one has nothing to do with greed nor desire. From what I understand pride is confidence in oneself to the point where one does not see himself as lacking in something: "I'm basically a good person, I do right by people... I don't sin, and I don't need to confess, repent, or anything of the sort", or something like that. This kind of attitude hinders one's ability to recognise their sinful and weak nature and seeking God as a result.
I damn hope you're not implying that western media isn't or if not more enamored with that.

Ah well, in that case, it's really just an easy way to have themes to add to your work. Kinda like how mythology and such gets added into everything for seemingly no reason.
They're easily digestible as theming for a general audience.
Also, in my opinion, they're really evocative and cool, and I like seeing how different authors interpret each sin differently.
What the Mortal Sins are supposed to mean doesn't line up with how those words are commonly used. One set of definitions would be
>Pride => Lack of self-awareness
>Wrath => Confusing vengeance for justice
>Envy => Blaming others for your poor lot in life
>Greed => Materialism
>Sloth => Knowing that you're doing something wrong, but doing it anyway
>Lust => Hedonism, thrill-seeking.
>Gluttony => Creating scarcity of resources (can include things like pollution)
Additional sins in some denominations include
>Despair => Because giving up on life means rejecting the kindness of others. Sometimes folded into Sloth
>Vainglory => Propaganda. Sometimes folded into Pride
All of the sins have "in excess" applied to them. For lust, it's having so much sex that you're no longer able to function as a member of society
Desire of flesh, desire of food, desire of money, desire of other people’s things, desire of inactivity(?), pride (generally just being cocky, but possibly desire of status/power), wrath (not necessarily a desire for blood, could just be lack of mercy not out of desire.)
I would imagine for the same reason it’s trendy in the west to adopt eastern theological notions. IE yoga and eastern styles of meditation. I do find it strange that the Catholic Church and it’s ideals are mentioned a lot in anime when only 6.2%, about 1-3 million of Japanese practice any form of Christianity. Maybe to appeal to western audiences?

They aren't. They're occasionally used as exotic window dressing, but unless you count any fantasy world church or mention of "sin" to be a reference to Christianity, even those are pretty rare.
