I get the feeling that Toorufags will remain delusional to the end, even after he's defeated and we move to the next arc people will say "Wow Jojolion is so unique and subversive for killing off the main villain in the same arc he was introduced in the middle of the story".

The Rock Humans aren't even the focal point of Jojolion's plot. They are just side villains who exist to make things more complicated.

I don't exactly believe Tooru is the main villain, Araki could pull some twist with Caato being the rock human mastermind as we haven't seen nothing of her
But my point stands stands still, rock humans are Gappy's main enemy, not Jobin. Out of the three characters that could be the MV I see beetle dad as the least likely option

Bro there wouldn't even be a plot if it wasn't for them, the entire part has been developing them and exploring their lore and schemes, they're clearly the main antagonistic faction of part 8

Gappy's personal beef with the rock humans ended with Damo. Furthermore, with Tooru neutralized they will be gone.
Jobin, on the other hand, has been built up as Gappy's foil for a while, and is also in direct competition with him for the fruit. The rock humans are the closest to the execution squad from VA, a rival faction, but not the main antagonistic force.

Same with Jobin as he doesn't have the fruit anymore, this isn't about "beating the villains to get the fruit" it's about getting the fruit before any of them

True, but he is the source of the Higashikata family conflict. With him gone, the conflict is over.

Then the one who does have the fruit is the main villain.

Why doesn't it look like Jobin
Why wouldn't Josuke recognize Jobin as the one from his flashback
Why would Josuke have a flashback of Jobin at all if Kira and Josefumi never met him

Jobin's main inner conflict is not even with Josuke, is with his dad and his family, reread all of the Jobin chapters and see how many times Gappy is mentioned, being a foil doesn't exactly make him the big baddie, he might as well be considered another perspective in the story as he's always takes a more protagonistic mantle anytime the arc is about him. I should also mention that rock people are a foil to Josuke as well.
If his conflict ended with Damo, then why didn't Araki just write them out? if they were like the Squadra then they should have fuck off by the second half and be replaced with the actual villain, why would Araki keep including them and exploring them if FOR THE ENTIRE if they weren't our main enemy
