In that setting, armor in general stops being relevant after you reach a certain level of strength, and the only people who use it after that are those who are super geared towards defense, like Water God swordsmen.
For everyone else, you either evade everything, or block attacks with your touki (fighting spirit).

As per usual, Dwarves and Elves can live for multiple centuries, but I don't think we're given specific, while Demons pretty varied in their lifespans, depending on their tribe—Roxy's for example can live up to 200 years, and the immortal tribe is self-explanatory…tho many(most?) demon tribes seem to have human-like lifespans.

knights do, she doesn't, even the main character went full body armor when time comes but not her, she's different even from female knights and other female adventurers

Yeah, there's plenty of long-lived demon tribes, but for example Roxy's old adventurer party appear to have had "normal" lifespans (at least the Horse dude did), so I kinda SUSPECT that most of the demon tribes have fairly normal lifespans, while there also being several with long-lived traits, such as Ruijerd's.
The story only really focuses on a couple of demons anyways, and there's a kind of selection bias, I feel, with half the demon cast being historical figures.

Pretty much everyone from the Demon Continent qualifies as a "Demon".
It's a very broad term, given the Demon Continent also has the largest variety of races.
More literally, the Japanese term is probably something like "magic person", but the Japanese word for "magic" is funny like that.

The beast races originate from a totally different continent, and given the lore behind the "Six-Sided World", they beast races probably all came from their own world (the Beast World?), whereas the Horse-headed demon and other similar demon tribes all came from the Demon World.

Yeah. The setting is basically 6 worlds on a six-sided die, plus the Void World at the center of them.
Presumably, either the Dragon God or the Human God destroyed all the other worlds, and everyone escaped to the Human World, which is the last one that's still viable. Hitogami (the Human God?) apparently hides out in the Void World, IIRC.
There's also how, going by what Kishirika said, originally the Human World didn't have magic (or not as much?) before all the refugees came in, and humans who couldn't process magic power died ages ago from magic accumulation.
