The in-universe explanation is that, as a century-old (subjectively speaking) transhuman, she's above things like outside appearances and more interested in how someone looks inside. Fat boy was really, really good at that tennis game, so she saw a lot of potential in him.

The real-life explanation is that look, this is a harem series. The author knew that Kirito was too much of a Chad for the reader to self-insert. So here, have this fat fuckboi who cries a lot, because that's more indicative of his audience.

Yeah. As it turns out, the game has an MMO mode where time is even slower. It's so slow that some of the Kings are (through overuse of this mode) are much, much older than they look. The first Chrome Disaster was mentally an adult, while physically a middle-school kid.
