Never really got this complaint. There's like maybe one episode out of 27 with a focus on romance. Which aside from like two scenes isn't really about that and just has jeanne lecturing sieg on vengeance and being black and white about his view towards jack, and talking about her past and motivations for her own conflict with enemy ruler dude forgot his name before immediately getting back into war shit once jack pops up again. Every other episode is war shit or moral dilemna of some kind spliced with some character moments. Still wish the side characters got more shit myself but apparently a bunch of shit got chopped from the novel for the anime though so i dunno

Because he comes to embody her ideal and the things she loves and believes about humanity in spite his inhumanity and having every reason to hate humans which runs parallel to Amakusa hating Sieg being born an embodiment of his ideals and for moving away from that perfection he was born with and embracing the things about humanity as if that was the intrinsically superior choice. Shit's pretty simple user.

They focused on the most generic/boring (Sieg) and the most underdeveloped (Jeanne) characters and gave the a generic and lacking character arcs that could be barely classified as a an actual arcs. A the same they had other characters with relationships and dynamics that were actually interesting like Mordred/Kairi, Vlad/Darnic, Fiore/Chiron and the whole Chirone/Atalanta/Achilles triangle and just made the "main" plot and focus stick out as a less interesting part of the story constantly being showed down the audience's throat.
And yes, the light novel was shit too. They should have adapted Fate/strange fake which is written by the author of Bacanno! and is a much better story.

Weakened versions of two servants powers he can't even use at the same time except for Frans passive mana absorption which doesn't really do much and even with it fully awakened giving him a slight boost(still weaker than fran) he loses the sword match to a one-armed, half-dead Shirou who just came off using an EX-ranked NP and barely surviving La Pucelle and had to resort to almost killing himself with Blasted Tree which STILL didn't finish Shirou who died some time later with Semi due to the accumulation of all his wounds.

Literally never happens. Most of the cast don't care much about him and just think he's some kid who needs help. He's constantly lectured and chastised for his reckless actions which annoys him in the LN because he hates being looked at as a child and the only time he's openly praised by anyone is Laeticia who admires him not for his powers but because his willigness to come back and save his fellow homunculi and Karna who was just grateful he could finish his fight with Siegfried and honor their promise to some degree.

I think you mean Karna, and also never happens. What does happen is Sieg realizes unlike Siegfried he can't match Karna one to one because he doesn't have Siegfried's mentality to make full use of raw swordmanship and he's on a time lime so all he can do is wreck himself to use spamming that barely works since he loses to Karna even with NP spam once Karna breaks out VS. He also can't and didn't use NP spam against anyone but Karna due to how galvanism works and he could only do what he did because Karna had infinite mana at the time and was spamming tons of high mana density NP's back to back. And again, he lost to Karna 1-v-1 and would have fucking died without Astolfo coming in.

Those goals are very humane. The entire time Sieg has been acting like some generic SI, never once he acts like something that a non-human would do. Hell given how the homunculus-craft that was used to make him is similar to the one Einzbern has he's pretty much human.
Only his homunculus comrades act like dolls (charged into the enemies regardless of death) until he told them otherwise.

Why? Where? He got help from three heroic spirits which were humans (well Chiron is a centaur but details), he then got help from a kind man, and more help from other masters. Saying that he has every reason to hate humans is incredibly dishonest when he got help and treated nice from them.
