I would say Saiyans are more durable than humans without ki but just to the level we see in early DB/untrained Goku. He can take a pistol bullet to the skull but it really fucking hurts

It's not perfect because you have 3 continuities here and some contradictory stuff but these are the best versions of each arc. Skip filler. But then again, it's best to see everything and decide yourself which is best.
