ive tried watching her anime like like 5+ times over the years, and i always drop it super early on, like around a dozen episodes in.
Does it get better, or do people only like her for the design?

Slayers came out in '95, and is a victim of being a standard shounen of the time. It didn't bring much in terms of animation until it got to NEXT, not to mention that the story it's telling over the course of 26 episodes happened in only three volumes of the light novel. It's spread out too thin, with a huge chunk in the middle being filter.
NEXT is where Slayers got much more interesting, since it adapted what is considered the best part of the main light novels, and improved on it in some ways. TRY managed to go even further and went so fucking off the rails it has polarizing opinions on its content.
Really, though, what makes Slayers strong, in my opinion, is everything but the anime. The OVAs and movies are gorgeous, and even though the author's voice is a bit lost in fan translations the light novels are still an entertaining read.

I'm in the same boat as you. Everything feels like it takes forever to get through and it wasn't very interesting or enjoyable. The animation is mediocre and as much as I like King Crimson, I don't like hearing bad synth-heavy homages to their works.

Judging by collections posted, yes.
I do for certain designs I really like (I have multiple NGNL Shiro figures where the show was whatever but the sculpts and colors are great) but generally only keep one figure per character even for shows I love.
