It's not that he should never die, it's that he should be mindful not to seek death. When he starts to consider RbD a resource to just use the cost is himself, because his own life is a commodity, which would naturally impact how he goes about things. Since he doesn't want to consider other people's lives as a commodity Satella is telling him he shouldn't treat his as that either.
The Rem thing was resolved, in a sense, but then she died and he became asshurt about it. His self-loathing for losing her outweighs what she wanted for him because she's the source of his anguish now and he utterly failed her. If she hadn't become a potato this wouldn't particularly be a problem and he would work with others better (another issue she had brought up but he quickly forgot about/was punishing himself for when she effectively died)

That's a matter of the LN/Adaptation, he makes a lot more progress in terms of figuring out potential solutions much earlier. An example would be this episode where Roswaal blindsides him with having hired Elsa, and while he didn't realize Roswaal did that even back in arc 1, he had at least figured out Roswaal was doing it now and steers the conversation in that direction instead of just having it dropped on his lap.

You can't really fuck him over. If you do something that breaks sequence he just goes all depressed clown because this wasn't the one. But since he has no carry over that's a unique, individual reaction every time, so you aren't wearing away at any patience he has or anything.
