If Guts leaves fairyland, its game over. Best case scenario I can see is both him and Griffith dying somehow, but I don't see a happy ending for Guts(or anyone else.)
Guts will leave for Rickert eventually and Locus has a target on his back.
He'll win somehow and then you and a lot of others will complain about how it doesn't fit the tone of the manga, just like how a bunch of people used to complain about Schierke and the fact that Guts has a happy go lucky JRPG party now.
That is in fact a question that Miura himself has spent a lot of time trying to figure out how to answer.

But Guts having new people to trust makes sense. Guts magically killing Griffith ignores everything the story has set up so far imo. But I also don't see the manga just ending with Guts staying in Elfhelm and Griffith fucking off in his own kingdom. Pretty sure that if Guts doesn't look for trouble, then trouble will come to him. Doesn't he also still have a beherit?

It's not about Guts grinding enough xp to kill the big baddies.
Actually that's kinda been a part of the story ever since he got the Berserker Armor.
Guts has no aptitude or skill for magic, but after using the Dragon Slayer to kill so many monsters, it's gotten really good at killing monsters.
Okay, but that's not the theme of the story.
Guts hasn't really done anything to signal that he's entirely done seeking revenge. His priority changed from indiscriminately slaughtering apostles to taking care of Casca then getting her to Elfhelm so she can be healed. It's been a few days since she's been healed, what does he do now? He's definitely not staying in Elfhelm forever and even if he did I doubt Griffith is going to leave it alone. Does Guts not give a shit about Rickert and Erica anymore? Even if Guts leaves Elfhelm only to see that Rickert is still alive he'll probably be forced back into fighting by Locus and other apostles who want him dead.
But you're confusing something that is explicitly part of the story, with fans wanting to know that the whole story isn't going to die on a wet fart with Guts dying on Griffith's blade completely helpless against the power of a God in the flesh.
People are wondering how the story is supposed to reach the climax, when he's clearly barely able to stand against the villain's MUCH weaker Generals.
See, you're on the right path because now you're discussing character motivations and how their actions can affect those around them. Not theorycrafting how much xp a JRPG party needs before they can kill the final bosses.
