I watched part 1, then read part 2. I would say the entirety of part 1 is a really good shonen. You may think differently if you've seen plenty of other shonen, as the tropes in naruto a very played out at this point.
Part 2 (shippuden) starts off well but devolves into a shitty, SHITTY story imo. As for reading vs watching, I'm happy I watched part 1, but reading will be tremendously faster. And also, if you DO end up watching, skip all the filler

If you skip the filler of the first anime, it's less than 125 episodes long, which may sound long but time flies by so fast you end up watching 6 episodes without realizing it.

I didn't watch Boruto, but I'm saving it for when it's done I guess. Honestly the entire last arc of shippuden (which was entirely too long) really put me off the rest of the series. I don't care a ton about following up on it, but it's certainly not worth keeping my attention to watch 1 ep a week
