This story works so much better as an LN anyways, and it's one of the few legitimately well written LNs.

I'm really enjoying it. When I started the series, I didn't expect it to have yuri chapters, yuri characters, yuri couples, yuri kisses, yuri marriages, yuri creators, yuri confessions, yuri confessions to the MC (which she doesn't reject), and no significant non-yuri romance. And I guess Adachi to Shimamura is fine too.

Can't really think of any. Manga maybe, though it depends on how exactly you feel Adachi and Shimamura is like.
There's like 5 other shows that have "subtle" yuri this season.
I assume that's not just what user is referring to but rather the overall tone, character personalities and the like. Stuff like Elaina's Journey isn't anything like it.
