Shirou won because Shirou's tracing ability is overpowered enough to put him on the same level as the greatest magi in Fate. He can only recreate the swords, but because swords wielded by Heroic Spirits have a life of their own, he inherits some of the skills, he's physically on par with Tohsaka, meaning somewhere above the level of an olympic athlete and when fighting Gil he had the advantage of luck. At his peak, Shirou can fight against the strongest version of Saber in terms of raw strength and win, dying on the spot, he's made up as weak throughout the story but he really isn't, he's a beast in the Nasuverse, an oddity on par with Shiki.

UBW is literally his perfect counter. Outside of Ea, he has nothing that can beat it since it nullifies his greatest advantage and produces weapons faster than GOB. Shirou can also keep pressure on him by staying in his face while tracing a weapon that gives him the power and skill of a hero capable of at least being able to fight Gil who is about average as far as Servants go in close quarters. Shirou was able to trade blows with Berserker thanks to a projected weapon albiet shortly so being able to match gil head up while UBW keeps him from getting pincushioned makes sense. See the issue is looking at Shirou like some average highschooler when he has a busted ass ability that gives him insane versality and turns him into a type of psuedo Servant whose parameters change depending on what weapon he's wielding at any given moment.

Fucking this. Shirou is played as weak but the dude when you look at him objectively is a fucking monster.

The issue I had (as someone who just watched the anime, so feel free to discredit me. I don't care enough to read the VN) is that Shirou is portrayed as such until he gets UBW. Dude just has shonen spirit but no muscle to back it up the entire time, until suddenly his power unlocks and he's just on par with the greatest warriors in history.
UBW itself may be hella broken, but Shirou is just lucky he got such a broken power. Without it, he's just a fit high schooler in a world of wizards.
