Because anime as a medium has made a very significant tonal shift from humor and slapstick comedy, which was a staple of the genre in the past. To overly serious adultswim crap that westerners love, wish fullfilment and fanservice.

Both Re:Zero season have the extra mini episodes in its own series ("Breaktime" or something like that), it's pretty cool.
Do they still do episode previews after the credits where nobody actually tells you what's happening next week and instead they're dicking around?
Kimetsu had them.
Which is weird because they were blatantly for kids despite its timeslot.
They've finally been able to put them to good use at least.

Little snippets of characters bullshitting around after the episode ended. Bleach used to have them all the time and Shippuden had them where the characters acted as if they were actors acting in Naruto Shippuden
Omake? They usually go on the web these days. Kuma Kuma Kuma Bear has them for instance, called Bear Bear Bear Kuma.

They're really not that uncommon, they just got moved to being published online and stuff between episodes rather than slapped onto the episodes themselves.

Damn I miss this shit too.
These end skits weren't the norm of the industry, they were something unique to Studio Pierrot to provide fans with more interactions of their favourite characters. Other anime have used them in the past but nowhere near the frequency of Naruto and Bleach.
Also, since most people watch new releases online, it is easier to put these small skits as separate clips on a website.
I feel like them not being included with the episodes makes it harder to find them subbed

Where can I find them
Because long-running shows used to have problem filling the runtime with proper animation so they filled the rest with lazy omakes. Now that most series are only 1-2 cours long, studios don't have to resort to omake scenes because they have planned out the production more carefully.
