The lack of subtleties is what made him an extremist, when you dehumanize people you dont like daily, there is no need to be subtle in a private setting like what the family did.

In manga the mother is helping him to frame the orphans with the silverware and Albert chokes her while Moriarty kills the brother. Wonder why they changed it. The way they start the fire is also bit different.

You don't need to "man up" to crawl for help and make noise (making a vase fall on the floor, for example). They just assumed that the wound was fatal enough to incapacitate him completely, while at the same time keeping him alive long enough to die from smoke inhalation.

The kid doesn't know that and in the next scene he wonders about Papa Noble's motives.

He's probably omniscient about the setting he's in, that's usually the case with low IQ stories.
