Realistically, how much can one make off investing $100 in ETH? I have a little change and just want to put it into crypto but I want to take a risk. If $100 on ETH would realistically only give me maybe $200 in 6 months I would rather try something else.

Better invest that money into AVAX which launches end of this month.
A hundred is a very small investment. Maybe 700 a year if you trade well, spot trends etc. I'm not a pro but ideally you'd want to invest in other altcoins as well.

ETH is realistically speakng ging to reach around $900 within a year, around $2000-3000 once ETH2.0 is up and running. But even more important, by that time it will also become much more stable and really stable by crypto standards. So if you need to start from $100 now, search for low cap defi coins with legit projects (right now BZRX or TKN, or AKRO would be good) and using 2 or maybe all three of these, switch stack according to their cycles (so f.e. buy TKN now, when it is up 50% see if BZRX is dipping and fli stack) and so on until you have about $1000 and then put that in ETH. Ideally, that's how I would go about with that. But yeah getting a lot starting from$100 only without investing more is very hard, it's not 2013 anymore
No invest in AVAX, the tech comes from the same place that gave us chainlink.
Vitalik already bend the knee as the AVAX technology is a completely new consensus protocol and superior to everything known so far.
