Anime, manga, and art that does not rely on real life human beings has an incredible advantage
It can literally do whatever it wants with its characters.
One thing that anime does fairly often is add certain adult features and behaviours to younger characters for the sake of making them more interesting and capturing something not possible in real life.
Sure, you could have made a show about college girls doing the same things, but it wouldn't capture the same charm and innocence
You could also make them look like real 12 year olds, clumsy movements, babyfat, and general pudginess, but the series would not be even close to as interesting, it would almost feel more perverted and intrusive.
One of the biggest changes most people don't notice is the writing. School girls don't think this way, and if you were to have a YRYR like situation in a middle school it would mostly be really trashy and really unappealing.
The ability to mold our reality for more interesting stories is wonderful and should be celebrated
