Soft smiling kind guy is actually someone who's suffered through hell and back and doesn't want people to know. You can throw in OP's trope if you like but I prefer when it's just them being broken or losing patience than a true alter ego.
Honestly it works in both battle series and SoL drama, hooks me in on waiting to know what happened or for the other characters to find out the extent of it. And then there's the cliches of either someone admiring them for carrying on with that burden, or someone hating them for running away from responsibility or doing something unforgivable in the past. It sounds so cheesy when I put it in words.
Off the top of my head I suppose Boogiepop would count, and Samurai Deeper Kyo but it's been forever since I read it. Maybe Nurarihyon no Mago? Honestly feels like it should be more common but I'm struggling to think of legit examples. Mononoke doesn't really because Medicine Seller is already pretty cool before he tags out with his brown self.
There's a few female side characters with it in some shows but it's not quite the same effect. Usually it makes them a threat to their allies or they start out an antagonist.

I like it even more when the meek guy realizes cool guy isn't a separate person and their personalities merge. Kinda like the MC in Nurarihyon.

A short moment(not an entire arc) of two characters you least expect to be fight-happy start a battle out of nowhere
Dark Flame Master from Chuunibyou. The only serious example I can think of, if you actually mean retarded and not just berserk/mindless, is Katekyo Hitman Reborn. Only in the beginning though since it becomes another example of what OP described.
Mob Psycho 100 could count. Paprika for a female example.
I already mentioned Noragami for a different trope in this thread, but I have to mention it again for being my favorite example of this trope, mainly because it's used to explore the effects of being a victim of child abuse.
Maybe Zenitsu from KnY when he faints and taps into his training unconsciously and that guy from One Piece who has a violent multiple personality that swaps when he falls asleep
I like it when predestined groups come together. Like the moment in early Sailor Moon when she meets Mercury or Saturn's civilian selves, and it clicks in your head and you go, "ohh".

Kenshin and Vash are two of my favorite MCs because of this. To an extent, Onizuka as well.
I don't know if it can be called a trope but I love it when the bad guy is pretending to be on the good side, there aren't many examples I can think of though, Aizen comes to mind but we only saw his POV after the reveal.
The second part of death note is the peak of this for me, when Light is actively leading a global investigation against himself

Both of them just get way stronger when they're asleep, not necessarily more mature or more suave. Cavendish is actually way more suave and popular when he's in his normal form, but he's only a fraction as strong as his alterego.
In a yugioh 5d’s psp game you can pull that crap on all the characters.
