His training isn't very effective. Say what you want about Saiyan genes but Goku and Vegeta are always murdering their bodies in order to get ahead.

Humans simply have limitations. He could probably still get a bit stronger by someone unlocking his hidden potential(like the special water did to Goku, or Nameks leader did to Krillin + Gohan), but that's it.
What Humans have over most other races in the Dragon Ball universe is intelligence. One human was able to create a freaking time machine, that persons father created a device that can shrink almost anything into the size of a little capsule, and another human was able to create robots and cyborgs stronger than any other being in the universe. Plus one human was able to invent a martial arts technique that can seal away even gods, while another earthling created a food that can heal any injury instantly.
Humans are freaking monsters in this universe, the problem is that they simply don't have high powerlevels, and that's what the main cast cares about. If Bulma wouldn't rely on others to deal with problem of the day, she probably would have been able to beat any villain herself given enough prep-time.

I don’t mind power levels caps but they way things are done in DB is completely fucking retarded. Personally, I’d have made it so that someone with a stronger power level can deal more damage to you in a single blow and also take more damage over all but someone with a weaker power level should be able to take them out so long as they grind them long enough.

The quality of his training is poor.

Humans are limited. He reached his limit fighting and being able to match unfused cell. That's the apex of human potential until the fanfiction.

Training by yourself doesn't get you anywhere. Goku has always relied on some sort of external help to get ahead of his peers, like the holy water, the Kaioken, getting nearly fucking killed, gravity training, time chamber, etc, etc.

Power levels should only "cap" insofar as the sense that it's as far as the series gets. You shouldn't attach numerical values to it where the MC is lie 12 quadrillion and then everyone else gets like 5
