Why is illya such a weird freak in stay night. I liked it better when she was a cute magical girl doing cute things like kissing her sister

I'd want a magical girl anime with OG Ilya, not sure why they changed her personality so drastically desu.
I get how it makes sense in the story itself, but outside of it....why?

Because she was initially a meek looking polite talking girl that seemed an insane murderer, that you then learn is a complex tragic character and you feel bad for her and want something good to happen for her, but it never will. And you can't handle a complex character in an actual story so the character gets turned into a child so you can be a sick fuck.

She had a pretty terrible life so its understandable.
She lived until she was 8 living a comfortable life with a loving family and a castle full of comfort and servants.
Then her parents go off to fight the Grail War.
Without warning all those comforts were stripped away and replaced with a decade of painful experiments to shove as many magical circuits in her body as possible and make her a vessel for the next grail.
She is then chained to Berserker who initially caused her excruciating pain just by moving because of the massive mana drain.
Her humanity was ripped out leaving her unaging but now with a preset lifespan, regardless what happens she would die during the next war.
All this because her father betrayed her family.

Then she finally leaves her homeland for the grail war and finds out now only did her father live a comfortable life after the war (she would never know he tried to return multiple times), but that he adopted this kid who is also a master in the war.
Its a wonder she didn't immediately go ham and leave him a smear on the road when she arrived in the city.

She calms down once she rationally understands Shirou had nothing to do with the sins of her father.
