Because food is an important element of the Japanese culture and may represent feelings, which make it a social experience. If somebody for example get invited to a restaurant known by some acquaintance, they have to eat plentiful food to show how much they care for each other.

People like to ignore that even basic shit like bread wasn't a widespread thing until the 18th century in Europe because of the lack of any more advanced cooking and baking options.

Well a lot of the food that we eat now is actually quite different from what they ate at that time. In general though you can expect that the vegetables and fruit that we eat now are massively better than what they had then, while the meat we have now is much lower quality(depending significantly on the animal). The grains are mostly the same though, as are most fresh seafood products, but the preserved seafood products they had then were just terrible. Of course the fresh seafood products of the time were only available on the coast, and meat was not available to the majority of the population. So imagine what is basically a vegetarian diet that is low quality for that. Also a lot of porridge that is basically the same as we have now, but with less salt and no spices.
