Youth dramas have been popular in both Western and Japanese fiction for centuries. From The Goonies to Buffy the Vampire Slayer to Durarara!!, stories involving teens and young adults coming of age can be a fun way to reminisce on one's own youth in a healthy way, on top of providing conflict and plot points specific to that age range that adults don't deal with (school drama, young love, etc).

I stand by my statement of youth dramas being for those who haven’t matured past their teenage years.

Here's the issue with that mindset. I am a well adjusted adult with a loving girlfriend and a great group of friends. Unfortunately, I am also in a global pandemic quarantine and it is harder to hang out with my friends as a group.
It's nice to have a TV show that depicts friends hanging out, but I find shows like Friends and Gilmoure Girls to be mind numbingly boring. I enjoy anime and would like to see an anime that depicts a fun friendship that I can watch while I am unable to hang out with my own friends.
It's healthy escapism, and there's nothing wrong with it. I'll stand by my statement that you only think the way you do because you are projecting your insecurities about your social prowess and maturity onto this genre as a whole.

Hyouka fits OP's description perfectly. The people who complain about anime like this are usually the type who don't try to dig deeper to find more anime. Zig Forums is at the point where there are people who haven't heard of Hyouka posting here. This is my point. This anime doesn't exist, but it should. Imagine a show with the expressive artwork and animation of an anime, but writing that transcends the superficial and shallow characters and plots that we tend to see. I've certainly never seen that because it doesn't exist, and I invite any user to prove me wrong. It looks like Hyouka might be a counter to my post, so I'll check it out and see if it indeed is what I described.
