The most emotionally mature is Snail, which makes sense since she is older. Cat only acts like she is emotionally mature, but completely lacks resilience in comparison to most characters, even Math.

The only part you got right is that she tries to play it cool for the most part, although that's kind of, you know, her main issue. One that she eventually overcomes. As for the rest:

Not sure what you mean by this. She's highly talented, but tends to play it down and enjoys it when people treat her "normally". Gaen even points this out during their conversation in Shiro. If anything she dislikes getting special treatment, because she doesn't feel like she's done anything to deserve it.

Well, this one's pretty subjective. But generally behaving politely and trying to be nice to everybody is not understood to be "bitchy" behaviour. I guess you mean the way she sometimes acts critical towards Araragi, but that's more of their shared in-joke or comedy routine than anything. Now Hanekawa can sometimes be a bit judgemental due to the high standards she holds herself to, but she's still committed to being kind to the people around her. Hardly bitchy.
