Well usually yeah. But all it takes is someone lightly armoring them up with mail or gambeson and teaching them enough discipline to hold formation; then they can hold their own since spears (even pitch forks) usually won against most weapons since they had a lower skill ceiling. It's simply much easier to poke and prod an enemy faster than they can try to close the distance and in good formation made them hard to approach. Horses often times would abandon a charge because it's a living creature that doesn't really like running head first into what it knows to be really pointy sticks..Unless the formation is broken by fear (hence the discipline)

Also a whole army of full plate knights was normally hard to come by and reserved for extreme situations (since full plate was expensive and took longer to make and was only made for nobility). It'd be unlikely that they'd use knights to fight an armed peasant militia; also farmers were in fact typically recruited for military service because farmers were far stronger than your average joe givin the diligent labor it took to run a farm during that time period.

To add to that an armed peasant militia would be very similar to your average army of the time since militias for a kingdom consisted of men wearing brigandines, gambeson or mail since that was much cheaper to buy and since most soldiers had to buy their own armor that's usually what they were packing because a lot of them weren't wealthy enough to afford proper plate let alone a full kit.

tl;dr peasants would actually pose a threat if they had a bit of discipline and very basic armor: padded cloth would be sufficient. Not ideal, but it was better than nothing. Also farmers were/are really really strong
