To contrast show fighters like him with true fighters like Baki, who've endured every form of life and death fight imaginable. He vrumbled the second his fights got real.

Itagaki writes very organically. It's the same reason why Retsu died - Itagaki started writing the fight and realised there was no way Retsu was making it out alive. Sometimes this means that he's perfectly willing to lose the war to win the battle.
