Zero has amazing characters and development. You can see each of the characters motivation and how they evolve through out of the story, and you get the sense of a larger world
Every single one of teh servants had characterization and personalitites of their own
In ubw you're stuck with probably the stupidest protagonist of all time, unnatural character development, and you can only understand the motiation of perhaps 3-4 characters (and those are due to the work that Zero had already done)
Comparing Zero to ubw is akin to comparing dogshit to diamonds

Unironically intentional. Type-Moon designed both /SN and Tsukhime this way, so you never got a complete picture of what was going on and who had what stake in shit unless you went through all possible routes.

But as a self-contained series it falls short. Remove the fancy fight scenes and animation and you have barely nothing left.
