The first two are fanservice. Oddly enough there is an issue with the numbering though, because the first OAD that was released was "OAD 2", which was the one with the swimsuits, while the second OAD that was released was "OAD 1", which was the one with the sumo, because its initial release got delayed.
Regardless, these first two are "fanservice OADs".
OAD 3, 4 and 5 are actually a 3-episode mini-arc that was written by the LN author exclusively for the OADs, so they can even be considered canon, just like Episode 24 of season 1.

The fanservice OVAs were boring AF and detract from the main draw of the show (ie. Rinmaru being the most competent and ruthless ruler since Tanya + his slow growth of his town)

To clarify - when I wrote "Slime Diaries original source material", I wasn't referring to the original light novel series that is the source material behind Slime Isekai. I'm referring to the "Slime Diaries" manga that is by the LN author and is also canon.
Currently at 4 volumes, the Slime Diaries manga is a collection of stories that explore R's shorter adventures. It also collects the adventures of other characters in town and covers some main plot material from alternative points of view.

Slime has like 3 "semi-canon" spin-off manga and 2 AU spin-off manga. Slime Diaries is one of the semi-canon ones.
