Morals are relative. It's a logical thing to do to defend yourself at all costs. Shiki didn't want to cooperate or talk to people. They decided to take everything by force and live by jungle rules. Yeah I think so too. Shiki just decided to play the game this way. They thought they were stronger and could afford that. Turns out they were wrong. They had the right to want to live and eat and people had the right to defend themselves. Nothing amoral happened here one side just proved to be stronger.

Perhaps. You could debate some of the brutality of the humans actions, there was certainly a torture revenge aspect to it although that might be justified considering just how many died without becoming shiki to feed them. But ultimately Shiki need to kill an intelligent race to survive and humans dont. The non-werewolves cant coexist peacefully and they cant exist without humans whereas humans are fine without Shiki.
