I've been contemplating going through this series all the way. I've only seen Kai, read chapters of the manga out of order, and culturally osmosised my way through the entire series. Every time I'm on forums/youtube, everyone says that even though the Anime changes things thematically, it also explores characters in ways the manga didn't have time to do. With all this in mind, and the fact that some filler episodes are horrible offenders. Should I..

Seeing Kai is more than enough.
When it comes to Super, watch Revenge of F and Battle of Gods, they're pretty mediocre though. After that, skip to the Black Arc in Super, watch it, the ending is terrible. Following that, watch enough of the ToP to understand what's going on, but skip everything shitty at your discretion. Anything not Universe 7 or 11 is irredeemable shit, Kefla vs UI Goku is cool though. Jiren's backstory is also terrible, and he's a terrible character with a terrible build-up, but he's fun to watch.
After that, watch Super Broly, and swear off Dragonball for good, there's no more content as far as you should be concerned.
Watch the tournament of power and nothing else
Let me emphasize that Z should be watched in Kai up to the Android Saga, and then Faulconer from Cell onwards.
Just watch it the way regular fans watched it:
1. Dragon ball
2. Dragon ball Z (you can skip Garlic Jr saga after the Frieza saga, it's pointless, too long and boring, the characters are supposed to be super strong at this point, I seriously find that saga annoying)
3. Dragon ball GT
4. Dragon ball super
5. Then read super's manga
There are many movies and I've watched them all, but the best ones are:
1. Bardock: father of goku (you can watch this after the DBZ Frieza saga)
2. The history of Trunks (you can watch this after the DBZ Cell saga)
3. Broly the legendary super saiyan (you can watch this after the DBZ Frieza saga)
4. Dragon ball: the path to power (you can watch this before watching Dragon ball or before watching DBZ)
5. Dragon ball z: battle of gods (watch this after watching DBZ, before super)
There are other movies, but I don't like them very much. Maybe "The tree of might", but it's also kind of filler.

I gave Kai a shot because people kept telling me how accurate it is to the manga. On the first episode they reveal Goku's father and Frieza.
Kai washes out colors.
Kai also redraws a bunch of scenes.

Read the manga or watch the entire series DB and DBZ subbed or dubbed. Both have their appeals and I think that both do a few things better. Try to get the funimation level releases or just Dragon Box releases for the entire series. There's a release out there that has those while also making use of broadcast audio that is far superior to the shitty monotone Japanese audio on official releases and does stuff like keep Dragon Ball's insert songs.
Don't do Kai.
DB manga is the superior version. Original anime (I mean both OG and Z) suffers from terrible pacing as a result of having to adapt around 13 pages of comic book per episode. I could never really compare Kai to Z fairly, but watching it feels somewhat awkward, I could never sit through it, maybe if the creators weren't such greedy fucks and animated the whole thing from scratch I could decouple one from the other, but well... since you saw Kai first, it's possible you would have the same effect in reverse.
Two things you want to watch however are original Bardock special episode (the one from the '90s, there's another one, no one likes it) and Trunks special episode. They're "non-canon"; Bardock started as an anime original character, was later explicitly included in the manga and two decades later Toriyama created his own version of his story; Trunks special on the other hand is based on a special manga chapter, but changes stuff from it to make actual story out of it. But both are among the finest works the franchise produced.
DBGT has its apologists, but is generally disliked in the fandom, stuff people tend to praise is one new transformation and the epilogue which admittedly is pretty damn based. But I don’t think it’s worth going through everything just for this.
As fot the neo-DB… really neither anime nor the manga is good, both are pale imitations of their originals. The best work in the revival period is the first movie (Battle of Gods) then the franchise kinda enters nostalgia-fest period. But if you want to check (literally) flashy fight scenes, you can skip both manga and anime altogether and just watch the movies, there’s one major status quo change in-between RoF and Broly and it’s explained in the movie. If you really want to see what happens, manga is way shorter, so there’s that. Also, there’s Jaco the Galactic Patrolman manga, you can read it after BoG, it introduces a recurring character and is never adapted.

Kai does a terrible job at staying faithful to the manga. As the series progressed they started keeping more and more filler and the Buu arc keeps almost all of the filler from the original anime
