Napoleon lead a war against the aristocracy. So Nobles left for the Americas while most peasants stayed.

In real life, Aristocracy got dismantled in France way before any other nation of Europe. So assuming they were the dominant power in the alternate history it makes sense that all the aristocrats across Europe made a run for the Americas as a safe haven. Note that the class warfare in France was literal back then, as in lynch mobs were forming on both sides and murdering each other on the streets.
