There is no debate. SnK is significantly better in almost all areas.

Isayama sucks at storytelling. He relies too much on plot twists, cliffhangers and flashbacks. People get tired seeing it used in the manga ad nauseam. It also doesn't help that he gets easily influenced by the shows that he watched like Game of Thrones. Ever since Marley, the manga dropped in quality due to the fact that worldbuilding and introduction of new characters were rushed.

Isayama is also not experienced enough to create stories about politics, class struggle and sociology. It takes years of studying and experience before someone can come up with a story like 1984, Lord of the Rings or even A Song of Ice and Fire. Don't bite off more than what you can chew, otherwise your manga will be a mess of ideas.

FMA is consistently better overall but it can't match the spectacle and excitement that attack on titan has in its later arcs

FMA has a decent enough ending and Brotherhood is a very good adaptationj from beggining to end. Aot is still unfinished but it's not looking to good, the anime was stellar from seasons 1 to 3 but this new season really drops the ball, it's not that bad but it's not even close to what it was.

FMA has had time to age the manga is gonna be 20 next year, FMA 03, like it or not is 17 years old, and FMA:B came out 11 years ago
I for one never had any interest in SnK but if people like it good for them.
I'm gonna go with FMA because it's both a great manga and the second anime adaption is one of my absolute favorites
