Yui is pretty much the easy genki girl and the protagonist doesn't have to work to get her to fall for him. Before the story even started Yui fell in love with 8man.

The only way what you wanted could have happened is if she gained interest in 8man and pursued him then changed her mind all before 8man had any character development. But that sounds really convoluted and stupid so I'm glad we didn't get it.

Yui was the underdog. She loved 8man but his feelings for Yukino were stronger. That's why she struggled. She was the underdog. By definition for there to be an underdog there has to be a favorite. Yukino was the favorite.

She took an interest in him because he jumped in front of a car to save her dog. Anyone would show some interest after that but I thought the Genki girl thing was mostly just a facade.
Her relationship with him was in jeopardy as well in the second season but they both put in the effort to work it out.

Read her monologues in the LN, Yui views 8man as her hero. She loves him because he saved her dog.

She did struggle with internal conflict when the triangle became clear. She was just more reticent.
