A bridge will be created and LINK tokens will be locked on ETH and minted on whatever other blockchains need them. Harmony is simply the first to do so.

If I own a private key on one chain, it would be impossible to prove I own that amount of link on another. Ergo I couldn’t unlock my link on a new chain. You insistently keep mentioning “minting” new coins. You could mint new tokens, but it would be impossible to give the same amount of tokens to each holder in a secure manner.
