Staking is non-custodial, so BZRX tokens don't leave your wallet when you stake them. Actually, that badly worded warning on the website is trying to warn you about just that... You'll keep your staked BZRX on your wallet, so if you transfer it to another wallet, it will be "unstaked" (obviously.)

Representatives are part of the governance structure they have in place, which isn't fully developed yet. In other words, it doesn't really matter what representative you choose now- once it is all working you'll be able to unstake and stake again with a representative of your choice.
