The MNs will function as individual servers for the exchange. Their network, a cluster of these servers. In buying a masternode, you are buying one of the participating servers that run the DEX and generate revenue.
I'm told that with Hydra, there will be a number of ways to configure a VPS towards varying degrees of risk - lower power/lower cost + conservative profitability vs high power/higher cost + hosting multiple chains.
