cont. from my transactions have been stuck for weeks now.
This has been my first time using metamask so I'm sure ive fucked up something really simple.
What do I do? I've tried cancelling the transactions, but that only creates a new transaction to cancel - it seems.
I have ETH funds in my metamask, so what's the problem?

How much gas are you giving to approve the transaction. For an approval and a swap under 10 mins, it’s gonna be at least like $40 homie.

If it doesn't appear on ether scan this makes me think its a problem with the metamask UI. maybe import your seed phrase to a different wallet and see what your balance is
Well I sent 0.01 ETH to myself as instructed by a helpful user. He advised that I set the gas to high, so I can't even remember, maybe it was like 0.008 ETH in gas? so that's about $3...
I was told sending ETH to myself won't cost that much in gas.

bruh have you been living under a rock? Uniswap had a surprise release of its token last night, gas fees are like 650+ gwei
resubmit ANOTHER tx to yourself for 0 eth and 700 gwei for gas price, and the same nonce as the first stuck tx and you'll be good

To be honest with you, I rarely use MetaMask or Uniswap. I just accumulate dips on coinbase these days, as more or less everything I want is on there. So no I wasn't aware that gas prices were through the roof.
I'm gonna try this method though, it's the same as what said. sounds legit.

It's gotten to the point where I can't even remember what the fuck I was trying to initially do, and what I tried to do to solve it. It's been weeks. So it's a mess to figure out.
Okay user. In your OP's pic, the send ETH transaction, is that the transaction that's also the one pending on etherscan? The one sending to uniswap: PNK? If it is, click on it in Metamask and tell me if it shows a nonce. I'll send you the instructions once you confirm it is

Not quite, it's now changed as I've tried to do what this user said But if I click on it and open in Etherscan it redirects me to page whre it says 'Sorry, We are unable to locate this TxnHash'

Try this OP:
Click the oddly colored ball in top right > go to settings > advanced > Reset Account
Unironically solved an issue I had myself before, it was metamask itself fucking up, not ETH
i'm in the same situation
upped the gas price up to 1200 gwei and still nothing
ok send yourself some eth with nonce 18
when it asks for gas click adanvanced in the top right and manually set gwei to 600
try to reset your metamask account
Alright then, we'll have to experiment for a bit. We're gonna go with what etherscan is showing right now, with the 18 nonce transaction. So here's how it works:
>Step 1: Disregard MM because it's a shitfest trying to cancel a tx on it
>Step 2: Go to MyCrypto.com
>Step 3: Depending on whether you only have MM wallet or if you're connecting a Trezor/Ledger, access the wallet through the appropriate option
>Step 4: You'll see UI in pic related, enter the data as in the pic
>Step 5: Click on Send Transaction and tell me if it works in about a min after that
I saw that earlier and was tempted to try it, but I'm worried that I'll just end up losing the information from all these fucked up transactions, and then have nothing to go off.
I'll take as many screenshots as I can for everything and then try the reset if don't get back to me.
Just to clarify, I've now set the transaction to 0 ETH back to myself with 700 gwei.

It's probably just Metamask fucking up man, I had the exact same issue
I understand if you don't trust random internet anons though
Here's what I did to fix the problem (I claimed mine) in steps
1. View your wallet profile in etherscan
2. Check to see if you have pending transactions
3. View each pending transaction and determine which has the lowest nonce
4. Send 0 ETH to yourself with the 'Fast' option and to whatever your lowest transaction-pending nonce was
5. Repeat if you have multiple pending transactions
6. Exit out of the 'transaction pending' screen on uniswap if the circle is still spinning
7. Claim it again
8. Use high gas

you can but it fails often
I did many resets in metamask when i had ghost pending txns or atrocious fees, you won't lose anything (it says so when you do it)

alright mate, i just got it working, you have to reset your metamask through the options like few other anons said before, just make sure you have the 12 word seed phrase

Good job OP, see transaction 18-19 nonce now. 18 is confirmed, now you just have to do the same process but enter nonce 19 and gwei 500-600. It has 98 gwei so it won't be accepted soon either

I have other 3 pending transactions after it and then another one to claim my uni gibs.

It's not stuck, it got confirmed. Check your Etherscan to see for yourself. The one pending now is a transaction with nonce 19, you just have to do the exact same thing as in except with nonce 19 (not 18)
I think your transaction didn't even enter the mempool which is why it's not showing on etherscan. Do this except with your own address and nonce 110, hopefully it is what I think it is
the 0 eth transaction went through, you need to repeat this step by increasing nonce 19, 20, 21 progressively until all your backed up transactions are overwritten
