because this thing is a bitch to cash out and not cheap. first you need ETH to claim, then to approve, then to swap. also presents three opportunities for transactions to get stalled, stuck, etc. and people lose ETH.
Another thing to consider is that people will be recieving UNI for providing liquidity so that might also cause it to keep dumping considering they would be getting it for free.
